Well, unless you have that gene that makes cilantro basically inedible….then that’s a different story.

Cilantro Chutney

3 cups fresh cilantro

1 cup water

1 cup unsweetened, shredded coconut

½ small green chili

½ tsp maple syrup or honey or 1-2 dates

1 inch piece of ginger, peeled, chopped or grated fine

1 tsp ghee

½ tsp black mustard seeds

½ tsp cumin seeds

¼ tsp salt

pinch of hing

4 curry leaves

½ fresh lime

Wash the cilantro leaves, remove stems and mix in blender with coconut, water, chili, sweetener and ginger. Blend at high speed until forms a finely ground paste. You may enjoy this chutney simply like this, add salt and lime and mix well, or add this spice mixture for extra flavour. In saucepan on medium heat, add ghee, mustard and cumin seeds, hing and curry leaves, wait till seeds pop. Allow to cool and mix this into the cilantro paste and add salt and lime. Mix well, keeps in fridge for up to 3 days.

*omit chili for pitta (fiery digestion- acidity, heartburn, insatiable hunger) and in that case omit the sweetener too.
